Dinner for One, Anyone?

Hi, guys!

So, since I’m still in the process of perfecting the site, I was planning on waiting until I had tons of beautiful pictures and content from my trip to Cabo in a few weeks to do my first blog post, howeverrr, plans they are a-changin’.

With that being said, I want to officially welcome everyone to Literally She! This blog is kind of my little baby right now, and I am super excited to start posting on a regular basis.

Obviously, there’s a reason I’m straying from my previous plan of action, so, without any further ado, let’s get into it!

Well, the fam is currently in Vegas, and I have the house to myself, which, while it’s ahh-maze for catching up on my showmances, usually leads to me stuffing my face with the most simple, convenient thing I can find for dinner.

And by simple, I mean driving through In-N-Out on my way home from work, ordering pizza//Thai food, or snacking on god only knows what so I can just munch and binge-watch anddd munch and binge-watch some more.

These days, though, I’m trying my hardest to watch what I eat, because, let’s be honest, I’m nowhere near that dream bikini bod I’m always promising myself I’m going to have.

So, while my heart was screaming, “I’ll have a #2, with grilled onions, pickles, and a Diet Coke,” my waistline was like, “Girl, don’t you dare! You just bought three new swimsuits in the past 48 hours”.

Needless to say, my waistline was right, and I just couldn’t bear the thought of letting all of that beautiful, itty bitty swimwear down by over-indulging.

So, I went home, raided the pantry, and somehow found a few golden ingredients amongst the pasta sauces, cereal, and Wheat Thins.

After I threw everything together, it smelled and looked delish.

So, I mean, obviously, I had to post a Snap of this glorious creation…

Which is exactly how we got here.

After I posted the picture to Snapchat, SIX of my friends messaged me within minutes asking about the dish.

So, I figured, why not share with everyone this easy-peasy goodness that is now one of my favorite go-to dinners.

Oh, and guess what? It’s super bikini bod-friendly and tastes SO bomb!

+ 1 cup of quinoa

+ 2 cups of water

+ 1 15 oz. can of black beans

+ 1 cup of MezzettaSpicy Marinara sauce

+ ½ of an avocado

+ Dried cilantro leaves

Place 1 cup of quinoa and 2 cups of water in a 1½ quart saucepan and bring to a boil. Reduce to simmer, cover, and cook until all the water is absorbed. This takes about 15 minutes or so.

Side note: If you’ve never cooked with quinoa before, when the quinoa is done, the grain appears soft and almost translucent and you can see the germ ring along the outside of the grain.

Next, drain the black beans and add the 15 oz. can of beans to the quinoa.

Then, stir in 1 cup of MezzettaSpicy Marinara sauce and mix together with the quinoa and black beans.

Almost done!

Just dice up ½ of an avocado and place on top of the quinoa/beans/sauce combo, sprinkle with a dash of dried cilantro leaves, and voila! You’re done.

Like I said, easy-peasy.

You can even add a dollop of plain Greek yogurt as a substitute for sour cream, which I’m definitely going to try next time around.
